Mexican food in London

Why is it so hard to get our tastebuds on decent Mexican food in London? Yes, Wahaca is a great new addition to Covent Garden, but what about some lovely spicy grub on the fly? Since the now legendary Beach Burrito closed down it's been really hard to find anywhere which will serve you something spicy and covered in cheese and guacamole for under a tenner!
